At present, the research and development of Siraitia grosvenorii are mainly concentrated on sweet glycosides. At present, 11 cucurbitane triterpenoid glycosides have been isolated and identified in Siraitia grosvenorii. All of them have the same aglycone mogrol. Mogroside V is the main sweet component in Mogroside, accounting for 30% - 40% of the total sweet glucosides, and its sweetness is 265-344 times of that of sucrose. In the market, glucoside V has been used as a quantitative index for the quality of Siraitia grosvenorii. Its content is generally determined by HPLC.
